May’s Tokyo Special explores early summer with serene tastes of satoyama packed in portable, convenient bento boxes. Made of bamboo sheath, bento boxes are antibacterial and keep food fresh and hygienic, providing a safe way to carry a lunch to the workplace or a picnic to the rice paddy.

A little more about satoyama…
As seen in the animated film Totoro, satoyama includes harmonious green forests & fields, rice paddies, clean rivers with fish like ayu, as well as the village people who live in this lush environment. The Japanese term is now used in the World Conference of the Third Party, international discussions on bio-diversity and sustainable economic future.
Visitors from overseas can enjoy satoyama experiences in Gifu Prefecture, where Chef Shuji resides and offers washoku workshops to his guests, using local ingredients and hand-picked sansai, wild vegetables. In May, with an abundance of sansai shooting out of the fertile Gifu soil, satoyama reaches full force.
